I recently stopped by Meraki Salad Bar, and it’s clear they are leaning into a Middle Eastern-inspired flavor profile that sets them apart from your standard “chopped and tossed” spots.

The foundation of any good salad are the greens, and Meraki delivers with exceptionally fresh cabbage that keeps the base light and vibrant. The cauliflower rice is also a great option that isn’t always available in other salad bars. Moving into the roasted toppings, the sweet potato is a genuine highlight—perfectly tender and naturally sweet, acting as the ideal counterpoint to the more savory elements. The beetroot, however, is a bit of a departure from the norm. Rather than the soft, vinegary slices you might expect, these are kept on the crunchy side. They feel less like a traditional pickle and more like a raw, earthy slaw ingredient, which adds a unique texture even if it lacks that fully pickled “zing.”

The protein station is where the Middle Eastern influence really shines, particularly if you choose wisely. While the chicken is consistently tender, the flavors vary wildly. The Teriyaki chicken leans quite aggressively into a sharp ginger profile—perhaps a bit too intense for a balanced bowl. However, the Moroccan and Chimichurri options are where Meraki finds its soul. These selections are beautifully seasoned and far more cohesive, offering that warm, aromatic depth we look for in Mediterranean and Middle Eastern fusion.
Overall, Meraki Salad Bar is a solid win for those who want a bowl with some personality.
